Interview with Food Enthusiast, Tommy

Tommy is a bartender, host and manager at Blue Ribbon Bakery and Wine Bar. He is also an aspiring culinary entrepreneur.  This interview was given while he roasted a chicken with garlic, rosemary and lemon. It smelled amazing.

GBEH: Where you from & where do you stay at?

Im from Jamaica Plain, in Boston MA, and I stay at 31 Park Place in Brooklyn, NY
GBEH: Who is your Daddy, and what does he do?
Oscar Hernandez, and he’s a retired social worker
GBEH: What sound or noise do you love?
the sound of a chicken roasting in the oven
GBEH: If Hollywood made a movie about your life, whom would you like to see play the lead role as you?
Pauly Shore
GBEH: Do you think you’ve “sold out”?

GBEH: Would you welcome the opportunity to “sell out”?

GBEH:  What are the first 5 songs on your “recently played” playlist?

Lee Hazelwood, “Glad I Never” and “Pray Them Bars Away”
Bob Dylan “Frankie Lee and Judas Priest” Leonard Cohen “The Old Revolution”
and Syd Barret “Waving My Arms in the Air”
GBEH:  Oysters or Peanuts at happy hour

GBEH: If I was over at your house, would it be cool if I crash there?

Yeah, in fact I’d insist.  Maybe you should move in with me.

[Ed. Note: Full disclosure: Tommy is Stella’s boyfriend and she did, in fact, move in with him 3 years ago]
GBEH: I’d love to. What is your problem?

cooking without a dishwasher in this tiny apartment kitchen

GBEH: Define the word “burrito.”

Burrito….is an inexpensive Mexican cuisine item that should entail a large flour tortilla with various fillings, including rice and beans wrapped into something that you should be able to eat without a plate or a fork or a dropped morsel of food.
GBEH: Preference: “tex mex” or “cali mex?”

I think Cali mex…but not being from either of those places I feel like I might not be aware of the finer points and differences.
GBEH: You have to move to another city that you’ve never even visited and live there for at least one year.  Where do you go?
Somewhere in the Piedmont region of Italy
GBEH: Invent a Ben & Jerry’s ice cream flavor that incorporates the name of a band.  Go

Maple Disco Biscuits and Oaxacan String Cheese Incident Ice Cream

GBEH: What’d you do today?

Scrubbed the floor, the stove, swiffered the hell out of my apartment floors.  Took a shower.
GBEH: If  your country of origin suddenly adopted an Israeli/Italian policy towards defense, and you had to join the armed forces in some capacity, what would you choose to do?

I would choose to be a cook and work in the mess hall.  Because I could still serve the country by feeding its troops and still doing something that i love to do.

GBEH: Brandon, Dylan or Steve?

Steve. because he’s funner, and more interesting. I wanna ride around in his fancy car doing stupid shit and getting in trouble.
